A comforting and flavorful One Pan Unstuffed Pepper Skillet Dinner with Ground Beef, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 4 bell peppers, diced
  • 1 cup cooked rice or quinoa
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, and sauté until onions are translucent.
  3. Cook ground beef in the skillet until browned.
  4. Stir in the diced bell peppers and cook for about 5 minutes until slightly softened.
  5. Add cooked rice or quinoa, diced tomatoes, chili powder, cumin, salt, and pepper.
  6. Mix well and let cook for another 5-10 minutes.
  7. Sprinkle shredded cheddar cheese on top and cover the skillet until the cheese is melted.
  8. Serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat on the stove or in the microwave.
