A quick and delicious Thai Peanut Chicken Bowl featuring tender chicken, colorful vegetables, and a rich peanut sauce, perfect for busy weeknights.

  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 1 cup rice or quinoa
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Chopped peanuts and green onions for garnish

Instructions

  1. Cook the rice or quinoa according to package instructions.
  2. Heat a bit of oil in a pan over medium heat. Add the diced chicken, salt, and pepper, and cook until browned and cooked through.
  3. Add the mixed vegetables to the pan and stir-fry for about 5 minutes until they are tender-crisp.
  4. Whisk together the peanut butter, soy sauce, honey, lime juice, garlic, and ginger in a separate bowl until smooth.
  5. Pour the sauce over the chicken and vegetables, stirring to combine.

Notes

Use leftover chicken or rotisserie chicken to save time. Adjust the spiciness by adding chili flakes or use a spicier peanut sauce.
