1 cup Greek yogurt
1 cup all-purpose flour
2 eggs
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup milk (or almond milk)
1 cup fresh blueberries
1 tbsp honey or maple syrup (optional)
Cooking spray or butter for cooking
Instructions
Whisk together the Greek yogurt, eggs, milk, and honey or syrup (if using).
Combine the flour, baking powder, baking soda, and salt in another bowl.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the blueberries gently.
Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or butter.
Pour batter onto the skillet to form pancakes and cook until bubbles start to form on the surface, about 2-3 minutes. Flip and cook on the other side until golden brown.
Serve warm with additional blueberries, honey, or syrup if desired.
