  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • 1 cup cooked rice or quinoa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Sour cream or Greek yogurt for serving (optional)

Instructions

  1. Combine the shredded chicken, black beans, corn, cooked rice or quinoa, cumin, chili powder, salt, and pepper in a large mixing bowl.
  2. Mix half of the enchilada sauce with the chicken mixture until well combined in a separate bowl.
  3. Preheat the oven to 350°F (175°C).
  4. Spread the chicken mixture in a baking dish and pour the remaining enchilada sauce over the top.
  5. Sprinkle the shredded cheese evenly over the mixture.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a few minutes.
  8. Garnish with fresh cilantro and serve with sour cream or Greek yogurt if desired.
