A delicious and nutritious meal combining lean chicken, sweet potatoes, and protein-rich quinoa, topped with a creamy peanut dressing.

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, diced
  • 1 cup cooked quinoa
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 25-30 minutes until tender.
  3. While the sweet potatoes are roasting, grill or pan-cook the chicken breasts until fully cooked, about 6-7 minutes per side. Let them rest and then slice.
  4. In a bowl, combine peanut butter, soy sauce, honey, rice vinegar, and sesame oil to make the dressing. Mix well until smooth.
  5. To assemble the bowls, place cooked quinoa at the bottom, followed by roasted sweet potatoes and sliced chicken. Drizzle with peanut dressing and garnish with chopped green onions and cilantro.
  6. Serve warm and enjoy!

Notes

Consider using tofu or shrimp as a protein alternative. Adjust the peanut dressing to your taste if needed.
