Delicious and filling Loaded Fiesta Potato Bowls featuring crispy roasted potatoes, savory ground beef, and fresh toppings. Perfect for sharing!

  • 3 large potatoes, cubed
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream for topping
  • Chopped green onions for garnish
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed potatoes in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until crispy and golden.
  3. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat, then add taco seasoning and a splash of water, cooking until well combined.
  4. Layer the roasted potatoes, seasoned ground beef, black beans, corn, diced tomatoes, and cheese in a bowl.
  5. Top with sour cream and green onions.
  6. Serve immediately or store in meal prep containers for later.
