2 medium zucchinis, sliced
1 pound lean ground turkey
1 cup ricotta cheese
2 cups marinara sauce
1 cup shredded mozzarella cheese
1 egg
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Cook the ground turkey in a skillet over medium heat until fully cooked, then drain excess fat.
Combine the ricotta cheese, egg, Italian seasoning, salt, and pepper in a bowl.
Layer zucchini slices, turkey, marinara sauce, and ricotta mixture in a baking dish. Repeat the layers, ending with marinara sauce and mozzarella cheese on top.
Cover with foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly.
Let it cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be frozen as well.
