High-Protein Chicken Cottage Cheese Enchilada Bowls

A balanced meal packed with protein and fiber, these enchilada bowls are flavorful and easy to make.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cottage cheese
  • 1 cup enchilada sauce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 cup diced bell peppers
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, cottage cheese, black beans, corn, bell peppers, cumin, chili powder, salt, and pepper. Mix well.
  3. Pour a small amount of enchilada sauce into the bottom of a baking dish.
  4. Spoon the chicken-cottage cheese mixture into bowls or individual serving dishes.
  5. Drizzle enchilada sauce over the top of each bowl.
  6. Top with shredded cheese.
  7. Bake for 20-25 minutes or until heated through and cheese is melted.
  8. Garnish with chopped cilantro before serving.

Notes

For extra flavor, add chopped onions or jalapeños. You can use leftover rotisserie chicken for a quicker prep time.
