Ingredients

  • 1/2 cup whey protein powder
  • 1/2 cup cocoa powder
  • 1/2 cup sweetener of choice
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the oat flour, whey protein powder, cocoa powder, sweetener, baking soda, and salt in a mixing bowl.
  3. Mix the almond butter, applesauce, eggs, and vanilla extract in another bowl until well combined.
  4. Add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Scoop the dough onto the prepared baking sheet, flattening each cookie slightly.
  6. Bake for 10-12 minutes or until the edges are set.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 5 days or freeze for up to 2 months. Use parchment paper between layers.
