Indulge in a lighter alternative to traditional cheesecake that’s creamy, tangy, and satisfying.

Ingredients

  • 2 cups cottage cheese
  • 1 cup Greek yogurt
  • 1/2 cup sugar or sweetener of choice
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine cottage cheese, Greek yogurt, sugar, eggs, vanilla extract, and lemon juice in a mixing bowl. Blend until smooth.
  3. Mix graham cracker crumbs and melted butter in another bowl until evenly combined. Press the mixture into the bottom of a greased springform pan to form the crust.
  4. Pour the cheesecake filling over the crust.
  5. Bake for 45-50 minutes or until the center is set and slightly jiggles.
  6. Allow to cool, then refrigerate for at least 240 minutes (4 hours) or overnight.
  7. Serve chilled and enjoy!

Notes

Garnish with fresh berries, honey, or whipped cream for extra flavor. Store leftovers in the refrigerator for up to one week.
