A delicious and nutritious dish featuring lean chicken, grains, and plenty of veggies, perfect for meal prepping and customizable with your favorite toppings.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup brown rice or quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Cook the rice or quinoa according to package instructions.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season the diced chicken with chili powder, cumin, salt, and pepper. Add to the skillet and cook until browned and cooked through, about 7-10 minutes.
  4. Combine the cooked grain, chicken, black beans, corn, cherry tomatoes, avocado, red onion, and bell pepper in a large bowl.
  5. Toss everything together and adjust seasonings as needed.
  6. Serve in bowls, garnished with fresh cilantro and lime wedges.

Notes

For more flavor, marinate the chicken in the spices and olive oil for a few hours before cooking. You can swap chicken for turkey or tofu for a vegetarian option. This dish can also be made gluten-free by using quinoa.
