A comforting dish combining chicken pot pie flavors with nutritious sweet potatoes, perfect for meal prep.

Ingredients

  • 4 medium sweet potatoes
  • 1 cup cooked, shredded chicken
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup low-sodium chicken broth
  • 1/2 cup low-fat milk
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke holes in sweet potatoes with a fork and bake for about 45 minutes until tender.
  3. While sweet potatoes are baking, heat olive oil in a pan over medium heat.
  4. Add chicken, mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir and cook until heated through.
  5. Pour in chicken broth and milk, mix well, and allow to simmer for a few minutes.
  6. Once sweet potatoes are done, slice them open and fluff the insides with a fork.
  7. Add the chicken and vegetable mixture into each sweet potato.
  8. Garnish with fresh herbs if desired and serve immediately.

Notes

Adjust seasonings and use rotisserie chicken for convenience. Store leftovers in the fridge for up to 3 days.
