A healthy and quick pasta dish featuring tender chicken, whole wheat pasta, and a creamy Greek yogurt sauce, perfect for busy weeknight dinners.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 8 ounces whole wheat pasta
  • 1 cup Greek yogurt
  • 2 cups fresh spinach
  • 1 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest before slicing.
  5. In the same skillet, add the chopped sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
  6. Stir in the Greek yogurt until well incorporated.
  7. Add the cooked pasta and sliced chicken to the skillet, tossing everything together to coat.
  8. Serve warm, topped with Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of water to prevent drying out.
