1 medium spaghetti squash
1 cup fresh spinach, chopped
1 can artichoke hearts, drained and chopped
1 cup cottage cheese or ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
Salt and pepper to taste
Olive oil
Instructions
Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper.
Place the halves cut side down on a baking sheet and roast for about 30-40 minutes until tender.
In a medium bowl, combine the chopped spinach, artichoke hearts, cottage cheese (or ricotta), mozzarella, Parmesan, minced garlic, salt, and pepper. Mix well.
Once the spaghetti squash is done, use a fork to scrape the flesh into strands. Mix the strands with the spinach and artichoke filling.
Fill each spaghetti squash half with the mixture and pack it down gently.
Return the stuffed squash to the oven for an additional 15-20 minutes until the top is golden and bubbly.
Remove from the oven and let cool slightly before serving. Enjoy your healthy, high-protein meal!
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Can also freeze for 2-3 months.
