Light, fluffy pancakes packed with protein, made with Greek yogurt and whole wheat flour for a nutritious breakfast.

  • 1 cup Greek yogurt
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk (adjust for consistency)
  • Pinch of salt

Instructions

  1. Combine Greek yogurt, eggs, and vanilla extract in a mixing bowl.
  2. Whisk together whole wheat flour, baking powder, baking soda, and salt in another bowl.
  3. Add the dry ingredients to the wet ingredients, mixing until just combined.
  4. If the batter is too thick, add milk a little at a time until the desired consistency is reached.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  6. Pour 1/4 cup of batter for each pancake onto the skillet.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  8. Serve warm with toppings of your choice.

Notes

Adjust the milk carefully; adding too much can make the batter too runny. Don’t overmix the batter; slight lumps are okay.
