  • 1 cup cooked quinoa or rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large bowl, combine the cottage cheese, cooked quinoa (or rice), black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  2. Mix well until all ingredients are evenly incorporated.
  3. Transfer the mixture to an oven-safe dish and sprinkle shredded cheese on top.
  4. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until the cheese is melted and bubbly.
  5. Remove from oven, garnish with fresh cilantro, and serve with lime wedges.

Notes
