A comforting and delicious creamy spaghetti squash au gratin that’s perfect for the whole family, combining the unique texture of spaghetti squash with a rich, cheesy sauce.

Ingredients

  • 1 medium spaghetti squash
  • 1 cup heavy cream
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle the inside with olive oil, and season with salt and pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes until tender.
  3. While the squash is roasting, heat the heavy cream in a saucepan over medium heat. Add the minced garlic and simmer for a few minutes.
  4. Once the squash is cooked, scrape the insides with a fork to create spaghetti-like strands. Mix the strands with the warm cream mixture and half of the shredded cheese.
  5. Transfer the mixture into a baking dish. Top with the remaining cheese and Parmesan cheese.
  6. Bake in the oven for 20-25 minutes or until the top is golden and bubbly.
  7. Garnish with fresh herbs if desired and serve warm.

Notes

Check tenderness of the squash by piercing it with a fork. Experiment with different cheese blends based on preferences. Add more garlic for an extra kick.
