Tender and juicy chicken breasts slow-cooked with a refreshing lemon herb mixture, perfect for busy days.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a small bowl, mix together the lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper.
  2. Place the chicken breasts in the slow cooker and pour the lemon herb mixture over them, making sure they are well coated.
  3. Cover and cook on low for 360-420 minutes or on high for 180-240 minutes until the chicken is tender and fully cooked.
  4. Once cooked, shred the chicken with two forks in the slow cooker, mixing it with the juices.
  5. Serve warm with your choice of sides and garnish with fresh herbs if desired.

Notes

For added flavor, marinate the chicken in the lemon herb mixture for a few hours or overnight before cooking. Adjust herbs based on preference.
